Chaat Masala Recipe:
Ingredients:
- Half a teaspoon of mustard seeds
- Fenugreek 1/4 tsp
- Dry chillies 10-12
- Cumin seeds 3 tbsp
- Coriander 2 tbsp
- Black pepper 1 tbsp
- Panch phoron 1/2 tbsp
- Rock salt 3 tbsp
- Amchur powder 2 tbsp
- Ginger powder 1 tsp
- Fennel seeds 1 tbsp
- Cloves 10
- Salt 1 tbsp
Method:
- Each ingredient must be dried well or fried in a pan.
- Take care not to break it.
- Then, if you grind everything together, you will have a delicious chaat masala ready.
Maggi Magic Masala / Noodles Masala Recipe:
Ingredients:
- Chilli powder 1 tbsp
- Turmeric powder 1/2 tsp
- Coriander powder 1 tsp
- Garam masala 1 tsp
- Onion powder 1 tsp. Spoon
- Ginger powder 1 tsp
- Garlic powder 1 tsp. Spoon
- Garam masala powder 1 tsp
- Black pepper 1 tsp
- Fenugreek powder 1/2 tsp
- Amchur powder 1/2 tsp
- Testing salt 2 tsp
- Rock salt 1/2 tsp
- Chili flakes 2 tsp
- Cornflower 1 tbsp. Spoon
- Sugar 2 tsp. Spoon
- Salt 1 tsp
Method:
- Grind all the ingredients together in a blender.
- Then store in dry glass jars or airtight boxes.
Spice Making of Chopoti Masala:
Ingredients:
- Fennel seeds powder 1 tsp
- Dry chili powder 10/12
- Cumin seeds powder 1 tsp
- Fenugreek powder 1 tsp
- Coriander powder 1 tsp
- Black pepper 1/2 tsp
- Black cumin seeds powder 1/2 tsp
- Clove powder 1/2 tsp
- Paunch phoron 1 tbsp
- Rock salt 2 tsp. Spoon
Method:
- Lightly roast all the spices in a pan and let them cool.
- Do not roast the spice mixture too much, if roasted too much, the spices will turn black and the color of the spice mixture will be ruined.
- Now grind in a blender.
- If you want to store it for a long time, you can keep the prepared spice mixture in a glass jar or an airtight box in the normal part of the refrigerator.
Royal Garam Masala Recipe:
Ingredients:
- Elachi 12-14 pieces
- Cinnamon 4 sticks (medium)
- Bay leaves 4 pieces
- Black peppercorns 2 teaspoons
- Cloves 1 teaspoon
- Cumin seeds 2 teaspoons
- Coriander seeds 2 teaspoons
- Fennel seeds 1 teaspoon
- Half of a nutmeg
- Small piece of mace
Method:
- Dry roast all the ingredients on low heat until fragrant.
- When the spice mixture cools down, blend it in a blender to make a fine powder as per your preference.
- Store in a dry airtight container for one to two months.
- Then use it again.
- Whether cooking vegetarian dishes, vegetable items, or any meat dishes, the use of this hot spice blend will enhance both the taste and aroma of the food manifold.
